Ingredients:
1 lb cooked shrimp, peeled & deveined
1 large cucumber, thinly sliced
½ small red onion, thinly sliced
½ cup sour cream (or Greek yogurt)
2 tbsp mayonnaise
1 tbsp lemon juice
1 tsp Dijon mustard
1 tbsp fresh dill, chopped (or 1 tsp dried)
½ tsp garlic powder
Salt & pepper to taste
Instructions:
In a bowl, whisk together sour cream, mayonnaise, lemon juice, Dijon mustard, dill, garlic powder, salt, and pepper.
Add shrimp, cucumber, and red onion to the dressing. Toss to coat.
Chill for 15-20 minutes before serving.
Serve cold and enjoy!
